Ontario Spring Water Sake Company, based in Toronto, is the first sake brewery in Eastern North America. Combining traditional Japanese sake-making techniques with pure Ontario spring water and sake rice grown in California, the brewery produces ten varieties of its award-winning “Izumi” brand sake.
Founded in 2011 by Ken Valvur, the brewery has grown significantly over six years. Today, Izumi sake is available at more than 60 restaurants in Toronto and in liquor stores throughout Ontario and Quebec. Located on the historic site of the former Gooderham & Worts whisky distillery, the brewery has increased its annual production from 7,000–8,000 liters to approximately 20,000 liters.
Its flagship unpasteurized junmai sake, “Nama Nama,” is joined by the full-bodied “Genshu” junmai and the white wine-like “Teion Sakura,” which is fermented at low temperatures. At the on-site tasting bar, visitors can also enjoy freshly pressed, single-tank arabashiri sake.
