Our brewery dates back to the Kansei era, with over 200 years dedicated to the craft of sake-making. Our foundation lies in creating sake that is sincerely appreciated by the local community. While we strive to select the finest ingredients, hone our techniques, and improve our facilities, we believe the most important aspect of brewing lies in the heart of the maker. Since sake is fermented by living organisms such as koji mold and yeast, the brewer’s spirit inevitably influences the quality of the final product. We maintain a deep respect for nature’s process, reflecting on the mindset of our predecessors, who prayed to the gods for the safe completion of each brew, long before fermentation science existed.
