Shirafuji Sake Brewery is located in Oku-Noto, Wajima, at the northern tip of the Noto Peninsula, which juts into the Sea of Japan. Noto, the first region in Japan to be recognized as a Globally Important Agricultural Heritage System, is a place where rich food culture, customs, and traditional craftsmanship are passed down through generations. In 2007, the Noto Peninsula Earthquake caused extensive damage to the brewery. However, that same year, it was rebuilt—partially preserving the original structure—and began a new chapter. The new facility, though small, was designed for efficient production and incorporates local ate (Japanese cypress) and cedar wood. Despite its small production scale, Shirafuji Sake Brewery has gained a reputation for excellence. In 2017, their sake was selected to be served in the first-class cabin of ANA international flights, showcasing the quality of their craft.
