This brewery is a very small, family-run sake brewery in Shirakawa City, Fukushima, producing only about 80 koku (about 14,400 liters) a year. Despite its size, the young brewmaster and owner work side by side, aiming to create sake that is truly loved by the local community.
About ten years ago, they launched a new brand called Toryu, brewed with locally grown table rice Chiyonishiki. Their goal was to prove that even everyday rice can create truly delicious sake. Toryu is a special junmai sake with a high koji ratio, offering a firm, full-bodied flavor with a clean finish.
Their long-beloved flagship brand Hakuyo, meaning “White Sun of Shirakawa,” is a bold, dry sake that pairs perfectly with strongly seasoned local dishes. Both sakes are brewed using soft, flavorful underground water from the Nasu mountain range, which flows from a well on the brewery grounds.
