Matsumoto City is surrounded by mountains such as the Northern Alps. Hitogochi and Kinmon-nishiki, both suitable rice for sake brewing produced in Nagano Prefecture, are the main raw materials, and natural water from the Northern Alps is used for brewing. The brewer's basic policy is to keep the sake unfiltered and refrigerated in bottles to express the sake's original innocence. It has a gorgeous apple-like aroma, a lightness, and a well-balanced umami flavor.
