Tennessee’s first craft sake brewery. After years of research, several training trips to Japan, and countless hours of experimentation, Proper Saké Company was founded in 2016. As Nashville’s only sake brewery, it specializes in small-batch, unpasteurized, and unfiltered sake in a pre-modern Japanese style, as well as Japanese-style beers made with koji from Stithem.​
