Brewing from the underground water of Mt. Kai-Komagatake in the Southern Alps, which has been selected as one of Japan's top 100 famous waters, for over 300 years. Located in the abundant natural surroundings of Hakushu, we are the brewery behind "Shichiken," a local sake from Hokuto made with locally contracted rice from nearby farmers. Our brewing process for Shichiken not only relies on the rich waters of the Southern Alps but also stands out for using rice cultivated through contracts with local farmers. By utilizing locally sourced rice, which comprises over 95% of our ingredients, we achieve a sake-making process that is both safe and secure, harmonizing the region, water, and rice. We aim to blend tradition and history with a fresh perspective, promoting a sake culture that complements Japanese cuisine.
