Motomiya Sake Brewery, located in Unomachi, Uwacho, Seiyo City, Ehime Prefecture, has been producing sake for over two centuries in buildings that date back to the late Edo period. The brewery's facilities include the front storehouse, built during the Kansei era (1789–1801), and the brewing storehouse from the Ansei era (1854–1860), both of which have been preserved to maintain their historical charm.
This region is renowned as a fertile rice-producing area in the Nanyo region of Ehime Prefecture, blessed with pure water sources. Motomiya Brewery takes advantage of this environment by cultivating its own "Yamada Nishiki" sake rice and utilizing natural spring water from Ameyama, located behind the brewery, to craft their sake.The brewing process is overseen by the Ikata Toji, who upholds traditional techniques and meticulously monitors each stage of production to ensure the preservation of the brewery's distinctive flavors.
