Located in Komoro City, Nagano Prefecture, Otsuka Shuzo is the city’s only sake brewery and has been crafting sake since its founding in 1841. Its signature brand, Asamadake, takes its name from the ancient title of Mt. Asama, reflecting the mountain’s austere beauty and strength in the sake’s character. Brewed with mineral-rich hard spring water from Mt. Asama and premium sake rice grown in Nagano, Asamadake offers a clean, crisp mouthfeel, subtle yet deep aroma, and a refreshing umami-rich finish. At the heart of the brewing process are Takako Otsuka, the brewery owner, and Kiyomi Otsuka, the 8th-generation brewmaster (toji). Since taking on the role in 2015, Kiyomi has been dedicated to regional sake production, actively collaborating with local farmers and incorporating sake rice grown in Komoro to deepen the brewery’s connection to the local community.
