This brewery is located in Ōtsu City, Shiga Prefecture—the gateway to Lake Biwa, Japan’s largest lake. Founded in 1804 (the first year of the Bunka era), it has a history of over 200 years. While it once focused solely on producing table sake and junmai-shu, the brewery built a new facility dedicated to ginjo sake, and now crafts each bottle with care, passion, and love. The brewery uses small-scale tanks with a maximum capacity of 900 kilograms. In contrast to major producers who typically brew in 3-ton batches, this shows their commitment to small-batch production. They believe that the key to brewing excellent ginjo sake lies in maintaining a scale that allows for close attention to detail. Since 2003, the brewery has been run by Mr. Nakai, the current head, along with his two brothers. Despite its modest size, the brewery continues to pursue the creation of high-quality ginjo sake with dedication and craftsmanship.
