Shimizuya brewery, founded in 1873, once ceased production in 1985, leaving many fans disappointed.
However, in November 2010, the sixth-generation owner revived the brewery with strong determination, restarting sake production after a 25-year pause. With the aim of offering new value to sake enthusiasts, Shimizuya began brewing its own vintage sake — the golden-hued SAKAEMASU 55 and SAKAEMASU 50.
By rethinking traditional sake-making methods, the brewery embraced a fully junmai (pure rice sake) approach, small-batch brewing, and long-term low-temperature fermentation. These techniques bring out the rich, deep flavors that sake is known for. To establish a new standard for vintage sake, they use Burgundy-style wine bottles, allowing the unique character of each single rice variety to shine.
In 2020, Shimizuya also launched a new brand, KIYOMIZU, brewed with Maikaze, a sake rice grown in Gunma Prefecture.
