The brewery was founded in 1883. Its name comes from “Miyamasugi,” the sacred cedar trees that grow within the grounds of Ise Grand Shrine. These trees cannot be cut down, and only those that have fallen naturally due to storms or other causes are allowed to enter the market—making them extremely rare and highly prized as premium timber.
Sake production is overseen by Ms. Yoko Inagaki, who inherited the founder's philosophy. Except during the peak brewing season, she manages nearly all aspects of the brewery on her own. The previous generation believed that sake becomes smoother and more refined when aged in tanks, and she continues to uphold this principle.
As a result, except for unpasteurized sake (namazake), most of their products are aged for over a year—some for two to three years—before being bottled and shipped. The resulting sake offers a rich, mellow flavor developed through aging, along with a natural golden hue that reflects the true character of well-matured sake.
