Iwamura Brewery, located in Iwamura Town, Ena City, Gifu Prefecture, was founded in 1787 (Tenmei 7, Edo period). The Watari family, the current owners, originally started the sake brewery using rice they paid as tax to Iwamura Castle. In 1921 (Taisho 10), they established a joint-stock company, the second in Iwamura Town, and began producing miso and soy sauce alongside sake. This is why their company name uses "Jozo" (brewing) instead of "Shuzo" (sake brewing). Later, they stopped making miso and soy sauce and focused exclusively on sake brewing, continuing to this day. Even with such favorable natural conditions, the taste of their sake varies every year. They strive to continuously innovate so that their sake meets the evolving tastes of modern customers. Rather than mass production, they carefully craft each drop to resonate deeply with those who enjoy their sake.
