Located in the southwest of Tochigi Prefecture, Nishikata Town in Tochigi City is an agricultural area known as one of the top rice-producing regions in the prefecture. One sake brewery uses rice harvested not only from its own fields but also from seven local farmers and Tochigi Agricultural High School. They use sake rice varieties such as Yamada Nishiki and Gohyakumangoku, as well as other local varieties like Hitogokochi and Yumesasara. In addition, they also use rice from outside the prefecture, including Omachi from Okayama, Aiyama from Hyogo, and Kitashizuku, Ginpu, and Suisei from Hokkaido.
The brewery producing the "Suginamiki" brand uses only rice and yeast from Tochigi Prefecture, aiming to create a gentle and dry sake that people do not get tired of drinking. Meanwhile, the "Sugata" brand incorporates rice both from inside and outside the prefecture to produce sake with a rich aroma and deep flavor.
Regarding sake brewing, the brewery holds the belief that good sake comes from a good environment and places great importance on the harmony among the brewery workers. They believe that without mutual care and cooperation, it would be impossible to make good sake. Their sake quality does not follow trends but continues to seek the unique taste of their brewery. Their goal is to brew sake that brings comfort and relaxation to those who drink it.
