Buyu is a historic sake brewery located in Yūki City, Ibaraki Prefecture—a former castle town where samurai once gathered. The brand name "Buyu," meaning "bravery," was chosen to reflect the area's proud heritage.
The brewery was founded in the late Edo period, around 1867, by Yukichi Hosaka, who came from the Echigo region. With a history spanning over 150 years, Buyu has upheld traditional methods while also evolving to meet the times.
One of its distinguishing features is the use of a three-season brewing approach, producing sake from September through April. This extended brewing period allows for meticulous, handcrafted production, with careful attention given to each and every batch.
