With a history spanning over 300 years, the brewery originally began as a farming operation, using its own harvested rice to produce sake. Deeply rooted in the local community, Fuji Nishiki values sake-making that harmonizes with the region and its resources. The brewing water comes from Mount Fuji’s pristine underground springs—soft water with a low mineral content (hardness level of 32), which lends the sake a clean and refreshing taste. Additionally, the brewery grows its own rice, from planting to harvest, ensuring quality control while also contributing to regional revitalization.
