Tsuji Zenbei Shoten, founded in 1754, is located in Moka City, Tochigi Prefecture, and has a history spanning over 200 years. They use underground spring water from the Kinugawa River for brewing, which is soft water that brings out a gentle flavor. The brewery primarily uses locally grown rice, aiming to create sake deeply rooted in the region. Their motto is “handcrafted taste made possible by being small,” and they carefully continue traditional brewing methods passed down through generations. Their popular sake, "Tsuji Zenbei Junmai Daiginjo," crafted as a top-quality sake to accompany meals, has won awards at sake competitions. Currently, the 16th generation master brewer from Shimotsuke continues to preserve the long-standing traditions while valuing the “handmade taste that only a small brewery can achieve,” combining new techniques, youthful creativity, and passion to craft the next generation of sake.
