Miwa Brewery was founded in the historic Jinseki region of Hiroshima Prefecture in 1716. Today, its 15th-generation brewmaster, Yuji Miwa, continues to craft their flagship sake, Shinrai. The name Shinrai was inspired by two things: a lightning strike that once hit the brewery without causing significant damage, and the sacred land of "Jinseki," believed to be a dwelling place of the gods. Miwa Brewery’s dedication to craftsmanship lies in its use of locally sourced Hiroshima sake rice and soft water. Brewed in the region’s cold climate, their sake benefits from two distinct wells, each with different water hardness levels, which are utilized depending on brewing needs. In 2015, the brewery began contracting with local farmers to grow sake rice, and in 2018, they revived the traditional kimoto brewing method to honor their heritage further.
