The aroma is about half ripe Kyoho grapes and half tree honey. When I put it in my mouth, I felt a well-aged, strong umami acidity. Ouroku has depth even when it's freshly brewed, but this aged sake had a bicarbonate-like depth, and it was one of my favorites!
