Dassai Junmai Daiginjo 39

4.3Novice Review (Chilled): This sake was refreshingly clean with a smoother and less pronounced alcohol taste than Dassai 45. Although a Dassai Blue 50 has bolder flavors, this doesn’t have the “hay-esque” characteristic of the Blue 50 and is a lighter/cleaner drink.

4Dry with a punch that doesn’t burn but reminds you that this drink isn’t here to play. This bottle is a nice departure from some of the sweeter/frutier aromatic styles by featuring a more crisp and sustinct spice profile.

Dassai Blue Junmai Daiginjo 50

3.7Novice Review (chilled): A much bolder flavor profile among the Dassai line that I’ve tried (Dassai 50, 35). Very fruity, with a nice dose of acidity and sweetness. the only thing that makes me do a double take is this interesting hint of haybale that I get from this drink. I’m not sure if it’s this particular bottle, but the funk is slightly off putting for my tastes.

3Being completely honest here… this tastes like the white fungus on Brie cheese.
