Founded 300 years ago, the Ōnuma Shuzōten brewery, renowned for its "Ken Kon Ichi" sake, stands as a symbolic presence in a town rich with historical charm and has long been cherished by the local community for its flavor. The brewery sustained damage from significant earthquakes during the Great East Japan Earthquake, as well as in 2021 and 2022. After each event, extensive renovations were undertaken to improve facilities, such as implementing climate control in most production processes, while maintaining their commitment to traditional, handcrafted sake brewing methods like steaming rice with a "koshiki" steamer. Their specialty, the "Usu-Nigori" sake brewed in December using freshly harvested Miyagi Prefecture's Sasanishiki rice, is popular for its soft mouthfeel, vibrant freshness, and the harmonious balance of the rice's umami and acidity.
