Founded in 1865, this brewery has devoted itself to sake brewing for over 160 years. It is located in a fertile grain-growing region along the Azumi River, on the western shore of Lake Biwa—the largest freshwater lake in Japan—north of the ancient capital, Kyoto. The area has long been known for producing high-quality rice, with the majestic Hira mountain range rising behind it.
The region experiences distinct and vivid seasons: long, snow-covered winters; springs filled with blooming flowers; lush green summers; and bountiful autumns, where golden rice fields sway in the breeze. The sake “Matsu no Hana” is brought to life by the pure, refined spring water flowing from the Hira Mountains and nature's abundant energy, resulting in a rich and layered flavor.
The brewery values the human connection between the maker and the drinker, and aspires to remain a guardian of local culture through the art of sake brewing.
