The first attack is clear and typical sake but when you taste from the middle of your tongue, a fair amount of umami derived from local rice shows up and its end is right and clear. I’d say drinking with yakitori (tare) will make you smile since yakitori’s sweet-salty seasoning perfectly matches with this sake.
