Kondo Shuzo is a sake brewery located in Gosen City, Niigata Prefecture, founded in 1865 and now run by its eighth-generation owner. The brewery sits in an area whose name "Gosen" literally means "five springs," reflecting the abundant, high-quality water that has long made this land ideal for sake brewing. Their flagship label is the junmai ginjo "Koshi no Karoku," and they also produce "Suganadake," named after the mountain rising behind the brewery, along with their premium junmai daiginjo "Sugana." The eighth-generation owner is deeply committed to careful selection of both water and rice, crafting the clean, crisp style that Niigata sake is famous for. Brewery tours are available by reservation on weekdays from October through March.
