Guided by the philosophy of "Fueki Ryuko"—honoring tradition while embracing innovation—we cherish time-honored techniques such as koji-buta (traditional koji-making), long-term low-temperature fermentation, and the use of wooden vats and iron kettles. At the same time, we incorporate advanced brewing methods like ginjo-koji, controlled water absorption, and bottle pasteurization, along with modern refrigeration systems such as thermal tanks and cold storage containers. Through this balance of tradition and technology, we continuously strive to enhance the quality of our sake. Our toji (master brewer), Mitsugu Kato, upholds the spirit of wajo—harmony in brewing—to craft exceptional sake.
