Nishibori Brewery Company

Tochigi

Since its founding in 1872, our brewery in Oyama, Tochigi Prefecture, has utilized the region's excellent water quality to continue traditional sake brewing. Based on award-winning brewing techniques, both domestically and internationally, we continuously strive for innovation in sake making. We aim for "free-spirited brewing" that delivers not only deliciousness but also surprise and delight, combining the traditional methods taught by the late toji Tsugue, featured in "The Wisdom of the Oldest Professionals" (Tokuma Bunko), with innovative techniques that break conventional boundaries.
