Koyama Gionjo is brewed using only Yamada Nishiki sake rice, contract-grown at Ohashi Farm in Oyama City, Tochigi Prefecture. This exceptional rice is cultivated without any chemical fertilizers or pesticides in fields nourished by underground water from the Omoigawa River, which originates in the Mt. Nikko range. The same pristine water is also used in the brewing process, resulting in a sake with a smooth mouthfeel and rich, rounded flavor—a true expression of Tochigi’s natural blessings.
