Founded in 1892 (Meiji 25), this is one of the smallest sake breweries in Japan, producing less than 100 koku (about 18,000 liters) annually.
While preserving tradition, the brewery’s owner recognized the need for bold innovation. Committed to creating true jizake (local sake), they focused on every step—from cultivating local rice to brewing and selecting retail partners. They even developed their own unique sake rice, Ibi no Homare, and pour their passion into crafting and refining their signature sake, Ibi, earning strong support from fans over time.
Every day brings new challenges, but what sustains them is the people who eagerly await their sake. As a drink that has accompanied both joyful and sorrowful moments, it continues to be part of many life milestones.
At the heart of their philosophy is the belief that the true star of sake is always the one who drinks it.
