This sake brewery is located in Hitachi-Ota City, Ibaraki Prefecture, where Tokugawa Mitsukuni, known as "Mito Komon," spent his later years and worked on compiling the "Dai Nihon Shi" (History of Japan) at his retirement residence, Nishi-yama-sō. The brewery is situated in the southern part of the city, in the lowlands of the Satogawa River basin, an area blessed with excellent water and rice fields. Founded in 1875 during the Meiji period, the brewery has long been committed to preserving the unique appeal of local sake, which reflects the region's distinct culture—something not found in large brand products. With good rice, pure water, and a dedicated team of people, the brewery follows a hands-on approach to sake brewing, keeping the spirit of craftsmanship alive even as the years pass. The brewery continues to pass down this belief, creating sake that carries both dedication and heart.
