Gensaka Brewery was founded in 1805 (Bunka 2) during the late Edo period, in its current location. This was around the time when Tadataka Ino began his famous survey of Japan. Since its founding, the brewery has been operated by the Gensaka family for generations, and it is currently led by the sixth-generation owner, Arata Gensaka.
Their flagship brand, Sakaya Hachibei, is brewed primarily using rice grown in Mie Prefecture, reflecting their commitment to local, community-based sake production. In front of the brewery lies a 4-hectare rice field, where they cultivate traditional local varieties such as Ise Nishiki.
With a focus on sustainability, Motosaka Shuzo aims to integrate sake brewing and agriculture in a way that supports a long-term, self-sustaining rural society.
