Hyogo
Founded in 1837, Sanyōhai Brewery in Shisō, Hyogo Prefecture, has brewed sake for more than 180 years. The brewery relies on pristine water from the Ibogawa River system and rice grown in the fertile mountain valleys, where wide temperature swings contribute to ideal fermentation conditions.
Their flagship line, Banshū Ikkon—literally “One Cup of Banshū”—expresses a desire to offer “a glass filled with the essence of Banshū.” Crafted solely from local rice and water, these sakes are made without shortcuts to complement food, delivering a pleasing balance of deep umami and a clean, refreshing finish.
