Kubiki Brewery, located in Kakizaki, Joetsu City, Niigata Prefecture, was established in 1936. However, its sake brewing history is said to date back to 1697. Committed to a farm-to-bottle approach, the brewery uses only locally contracted rice for sake brewing, except for Yamada Nishiki. It also cultivates Hattan Nishiki, a rare sake rice in Niigata. With deep pride in its hometown of Echigo Kakizaki, Kubiki Brewery carries on the craftsmanship of the Kubiki Toji brewing tradition. Dedicated to making sake that enhances food and brings people together, the brewery continues to follow time-honored, handcrafted brewing methods.
