Hayashi Syuzo Company(Toyama)

Hayashi Shuzojo is the oldest sake brewery in Toyama Prefecture, founded in 1626 in Asahi Town, on the border between Toyama and Niigata. Its founder, a samurai stationed at Sakai — the largest checkpoint of the Kaga domain during the Edo period — began brewing sake alongside his official duties. The brewery sits in a stunning natural setting: the Northern Japanese Alps rise directly behind it, while the famous Hisui (Jade) Coast of the Sea of Japan stretches out in front. For nearly 400 years, the brewery has crafted sake using pristine snowmelt from the Alps. Its flagship label, "Kurobekyo," is named after the dramatic Kurobe Gorge and is known for its fragrant aroma and clean, crisp finish. The brewery also produces "Hayashi," a newer limited-edition junmai series launched by Hideki Hayashi — who became Toyama's youngest tōji (head brewer) when he took the role — featuring carefully selected sake rice from across Japan and praised for its refined aromas and elegant balance.
