Echigo Den'emon, located in Toyosaka, Niigata City, was taken over by Mr. Koki Kato in 2021, who began full-scale sake production in 2023. Mr. Kato is recognized as the youngest brewer following the brewing philosophy of the late Hiroshi Uehara, known for promoting junmai sake. Living alone in the brewery, he dedicates himself daily to the craft, investing considerable time and effort into each step of the process. His concept centers on creating sake that is both rich and refreshing, ensuring it remains enjoyable over time. While Niigata's sake is typically characterized by a light and clean taste, Mr. Kato aims to redefine this image by crafting a new style of Niigata sake that is neither overly rich nor light.
