Based on the concept of creating “a sake that tastes pure — the first cup is delicious, and the second brings comfort,” this brewery crafts sake using locally grown rice and subterranean water from the Yatsugatake Mountains. “Beau Michel” is a unique sake fermented while Beatles songs play throughout the brewery. It features a pleasant balance of sweetness and acidity, with a light 9% alcohol content. Brewmaster and executive director Takayuki Banno is uncompromising in his pursuit of flavor, even though his brewing style requires time and care. As international exports continue to grow, he hopes to “bring smiles to people around the world through sake.”
