Situated in a region known for hot springs and historical significance as a port for transporting silver, the brewery uses mountain spring water called "Iwasei Water" and primarily sources local sake rice like Yamada Nishiki. Specializing in sake brewing that highlights rice flavor over aroma, they employ the traditional "kimoto" method, revived by their current toji, Ryoma Yamaguchi.
