Situated in a region known for hot springs and historical significance as a port for transporting silver, the brewery uses mountain spring water called "Iwasei Water" and primarily sources local sake rice like Yamada Nishiki. Specializing in sake brewing that highlights rice flavor over aroma, they employ the traditional "kimoto" method, revived by their current toji, Ryoma Yamaguchi. Their focus on "junmai" sake, without added alcohol, underscores their commitment to quality. In addition to their signature "kimoto" sake, Wakabayashi Shuzo offers a diverse selection, including aged and sparkling sake.
