Located along the Kiso River in Gifu Prefecture, this small sake brewery was founded in 1887 (Meiji 20). Using underground water from the Kiso River as brewing water, the brewery is committed to traditional methods such as drip extraction (bag hanging) and the rare "Yaegaki-style press" to create sake with a smooth and crisp taste.
