​The brewery's origins date back to the late Edo period. Since its inception, it has been dedicated solely to producing sake that complements joyful gatherings. Pursuing a "ricey" flavor that harmonizes the umami of rice with abundant minerals, the brewery emphasizes local ingredients and craftsmanship. It utilizes "Ishitosui," water sourced from the granite-rich regions of Kasama City, and rice grown in Ibaraki Prefecture. The sake is meticulously crafted by local brewers from Ibaraki, with a strong focus on promoting consumption within the prefecture.​
