This brewery is located in Tsuruoka City, Yamagata Prefecture, in the heart of the expansive Shonai Plain—an area long known for its thriving rice cultivation. To the east lies the sacred Mt. Gassan, whose foothills are home to some of Japan’s most celebrated natural springs, selected among the “100 Exquisite Waters of Japan.” These pure waters flow abundantly through the Shonai region, enriching its fertile land. The significant temperature differences between day and night also contribute to the area’s reputation as one of Japan’s premier rice-producing regions. Grateful for the ability to use such high-quality rice and water, the brewery continues to pursue sake brewing that brings joy to its customers. Drawing on a long and storied history, they are unafraid to innovate. By using their own proprietary yeast strains and a variety of premium sake rice, and brewing with the pristine water from the Gassan-Asahi mountain range, they produce a diverse range of sake known for its rich character and quality.
