If you enjoy sake, you'll find that it often improves with a bit of time after opening. The flavors become smoother, fuller, and more gentle as the sake interacts with the air. It's particularly delightful to savor a glass that's been allowed to breathe for a day or two after opening. You'll notice that the richness and complexity of the flavors deepen, offering an even more enjoyable experience. Additionally, storing the sake at a low temperature without opening it allows its subtle and refined characteristics to develop further, elevating it to an even higher level of quality over time.

Watarai Honten Brewery Company
Yamagata
This brewery is located in Tsuruoka City, Yamagata Prefecture, in the heart of the expansive Shonai Plain—an area long known for its thriving rice cultivation. To the east lies the sacred Mt. Gassan, whose foothills are home to some of Japan’s most celebrated natural springs, selected among the “100 Exquisite Waters of Japan.” These pure waters flow abundantly through the Shonai region, enriching its fertile land.
The significant temperature differences between day and night also contribute to the area’s reputation as one of Japan’s premier rice-producing regions.
Grateful for the ability to use such high-quality rice and water, the brewery continues to pursue sake brewing that brings joy to its customers. Drawing on a long and storied history, they are unafraid to innovate. By using their own proprietary yeast strains and a variety of premium sake rice, and brewing with the pristine water from the Gassan-Asahi mountain range, they produce a diverse range of sake known for its rich character and quality.
