Founded in 1921 (Taisho 10), this brewery has long carried on the traditions and craftsmanship of local sake brewing. In 1995, they undertook a complete renovation of their facilities and layout to focus more deeply on quality over quantity. Guided by the motto “a little of something excellent,” the brewery continues to uphold traditional handcraft methods, with every team member involved in producing high-quality sake. Their ideal sake does not chase after trends of being overly dry or overly light. Instead, they aim to express the true, full-bodied umami of Japanese sake. Using carefully polished premium sake rice and brewing with Nanbu-style techniques that emphasize both “lightness” and “roundness,” they create sake with a soft, rich character and a smooth, satisfying finish.
