Founded in 1797 in Yachi, Kahoku Town, Yamagata Prefecture, our brewery is located in an area renowned for its dedication to rice farming, often achieving the highest yields in Japan. This region is also known for cultivating "Kairyoshinko," the only sake rice variety grown in Yamagata until recently. We use underground water from Mount Gassan, fed by perennial snow. This soft water produces sake that is smooth and delicate. By December, snow quietly accumulates, purifying the air and cooling the brewery, creating ideal conditions for sake production. With the perfect combination of rice, water, and air, this area is a prime location for sake brewing. All our brewers are local residents, making our brewery deeply rooted in the community. We aim to be a beloved local sake brewery, producing sake cherished by the locals.
