This is a very rare sake brewed with 100% rice koji. The brewing process is no different from that of sake, except that it is made using only rice malt, but the taste is a perfect balance of elegant sweetness and refreshing acidity reminiscent of noble rot wine. After three or more years of aging, the unique aroma and beautiful amber color of aged sake are revealed, adding a richness to the flavor.
