Founded in 1892, this brewery is located in the heart of the Iga Basin, surrounded by rich countryside where white herons soar through the fields. Committed to small-batch production rooted in the local community, they brew sake primarily during the coldest months of the year, focusing as much as possible on traditional, manual methods. They use rice grown in Mie Prefecture—mainly sake rice from Iga and locally contracted farms. In Iga Ueno, the land associated with the legendary Hattori Hanzo, they craft their signature sake, "Hanzo," bearing his name. In recent years, they have made significant efforts to enhance the quality of their sake, earning numerous awards. The brewery also embraces traditional methods such as wooden vat fermentation, while using well water from within the brewery, to create a wide range of carefully crafted flavors. They invite you to experience “Hanzo,” a sake born from the unique climate and culture of Iga.
