Hamamatsu Brewery, located in Hamamatsu City, Shizuoka Prefecture, produces the renowned sake brand Shussejo. The name, which means "Castle of Success," is inspired by Hamamatsu Castle—locally nicknamed "Shussejo" because many of its lords, including Tokugawa Ieyasu, went on to rise in rank within the Tokugawa shogunate. The sake inherits this auspicious name. Founded in 1871, Hamamatsu Brewery is a historic brewery where a female master brewer leads the sake-making with great care and dedication. Shussejo is brewed using ideal soft water drawn from 100 meters underground—pure spring water that originates as subsoil flow from the Tenryu River, one of Shizuoka’s finest water sources. The brewery takes pride in handcrafting all of its koji (malted rice), relying not on machinery but on the senses and intuition of the brewers. With a wide perspective and constant curiosity, they continue to explore new possibilities in sake brewing. Their aim is to create sake that remains enjoyable with each sip—smooth, balanced, and never tiring to drink.
