Michisakari, a historic brewery located in Tajimi City, Gifu Prefecture, was founded during the An’ei era (1772–1781) in the mid-Edo period. Its flagship label, also called Michisakari, is a distinctive sake known for its super dry profile—clean, crisp, and free of any overpowering flavors—making it an excellent companion to food. In the 1950s, when rich and sweet sake was the norm, Michisakari remained committed to its traditional brewing methods while adapting to the evolving tastes of the era. This dedication led to the creation of a special super dry sake with a 50% rice polishing ratio and a sake meter value of +10—a bold and refined expression of their philosophy that continues to define the Michisakari brand today.
