This sake is crafted using Tochigi's original sake rice, "Yume Sasara," along with the pure underground water from the Kinugawa River and Tochigi yeast. It is the pinnacle of the series, brewed by Shimo-no-Tsuji Master Brewer after over a decade of planning. The "Sawahime Shin—Local Sake Declaration" has now been completed. This special sake won the prestigious Gold Medal at the 2019 National New Sake Competition, making it a remarkable offering.

Tochigi

"Sawahime" is crafted by Inoue Seikichi Shoten, located in Shirakawa, Utsunomiya City, Tochigi Prefecture, with a focus on creating a beloved regional sake. Guided by the spirit of "Onko Chishin" (learning from the past to create the future), they embrace traditional techniques such as the Kimoto and Yamahai methods while establishing a new way of brewing sake. With a long, lingering finish, this sake is designed to complement food, enhancing the flavors of dishes while maintaining a clean, light aftertaste.
