This brewery, located in Iwakuni, a city known for its sake, has been loved by the locals for generations. It sits about 5 km upstream from one of Japan's three famous bridges, the Kintaikyo Bridge, in a mountainous area surrounded by nature. The brewery takes full advantage of the cold, fresh climate and abundant water, crafting flavorful sake that brings out the best in the rice. For brewing water, they use ultra-soft water from the underground springs of the nearby Nishiki River, as well as hard water from a limestone aquifer near the brewery. Depending on the desired sake style, they switch between these two water types. This ability to use both hard and soft water in a single brewery gives them great versatility in sake production.
