Founded in 1832 (Tempo 3), Hakurei Brewery is a historic sake brewery that honors the philosophy of Onko Sōshin—“respect the old, create the new.” They are deeply committed to harmony between rice, water, and people in every aspect of their brewing. The brewery uses pristine spring water from Fudō-no-Taki waterfall, which flows from the slopes of Mt. Yura in the Oeyama mountain range right in front of the brewery. This ultra-soft water has a unique quality that allows the production of both sweet and dry sake, and it forms the foundation of Hakurei's brewing tradition. Only premium rice grown in Kyoto Prefecture is used—no broken rice or imported rice is ever included. With this careful selection of ingredients and adherence to time-honored brewing techniques, each bottle is crafted by the hands of experienced brewers with great care.
