Shiga

Fujimoto Brewery, established in 1763, is a sake brewery located in Koka City, Shiga Prefecture—an area known as the homeland of ninja and situated near the border with Mie Prefecture. Following a divine message from the local Yamamura Shrine, a well was dug and an exceptional water source was discovered, unmatched in the surrounding area. Using this pristine water, Fujimoto Shuzo created a sake called Shinkai, meaning "divine opening," named in honor of its sacred origin. The brewery primarily uses rice grown in Shiga Prefecture, including Yamada Nishiki, Ginfubuki, Nihonbare, and Tamasakae. Notably, Fujimoto Brewery changes the type of koji used each year, resulting in unique flavors even when the brewing method remains the same. They also take on traditional methods such as mizumoto and saijo-jikomi (re-fermentation), combining time-honored techniques with innovative approaches to create truly distinctive sake.
